- Originally from the Le Marche region outside of Tuscany in Italy, Paolo Paoloni is dedicated to long standing wine traditions and focuses on traditional.
Italian varieties, which he feels enjoy a singular expression in the Valle de Guadalupe. - Having spent many years studying winemaking in Italy, then working for years for one of Mexico’s largest wineries, Paolo purchased 38 hectares in what has become the hub of high-quality wine in Baja California. He is one of the region’s pioneers and most respected winemakers.
About the Wine
- All of our wines are produced with grapes from our vineyard, watered with fresh water filtered from the mountains that surround the winery.
- The line Villa Montefiori is a modern expression of the new enology of Valle de Guadalupe. Wines are made with the best grapes and the most modern winemaking technology that result in fruity wines with velvety tannins and a great body. The wine line is ideal for those looking for friendly, well-balanced, soft, and fruity wines.

Elaboration: Hand harvested from top parcels carefully stored. Whole cluster pressed after early morning harvest. Fermentation in steel tanks at controlled temperature. 50% malolactic.

Tasting Notes
Light yellow viewing with hints of green. Intense aroma of green apple and pineapple on the nose. Lively acidity intensifies the feeling of freshness. Soft and round finish. Perfect with ceviche, sashimi, fried calamari and burrata.
