About the Producer
- Originally from the Le Marche region outside of Tuscany in Italy, Paolo Paoloni is dedicated to long standing wine traditions and focuses on traditional.
Italian varieties, which he feels enjoy a singular expression in the Valle de Guadalupe. - Having spent many years studying winemaking in Italy, then working for years for one of Mexico’s largest wineries, Paolo purchased 38 hectares in what has become the hub of high-quality wine in Baja California. He is one of the region’s pioneers and most respected winemakers.
About the Wine
- 75% Cabernet Sauvignon / 25% Sangiovese. Upon coming across this blend during an early tasting trip to Mexico several years ago, we knew it would be a hit in the United States if we could convince Paolo to allocate some our way.
- Impressively balanced, this blend proves how far winemaking in Baja has progressed over the years.

Elaboration: Estate grown grapes. Clay/sand soil. Vineyards planted 1998. Aged ten months in a combination of new and used French oak barrels. Malolactic fermentation in barrel. Unfined and unfiltered.

Tasting Notes
Big structure with good balance and vibrant acidity. Silky tannins lead to hints of spices, licorice, and rose. Long finish. A terrific pairing with spicy dry-cured meats.
